FATTY ACID COMPOSITION OF LONGISSIMUS DORSI MUSCLE OF BLACK GOATS AND MERIZ KIDS AS INFLUENCED BY CASTRATION AND SLAUGHTER WEIGHT

To investigate the effect of castration and live body weight at slaughter on fatty acid composition, a total 48 entire male kids (24 Meriz 24 Black goat) were selected weaning (90-120 days age) weighing 10.99 11.21kg, respectively from commercial goat farm used. After an adaptation period for week, both breeds randomly divided in to two groups, first was castrated, whereas second groups left intact, then allocated be slaughtered 15,20 25kg weight. All placed individual pens fed concentrate diet weighed weekly interval. slaughtering chilling carcass 24h fed. The L. dorsi muscle removed each utilized composition. Results obtained revealed that saturated acids (SFAs)have highest contribution, followed by poly unsaturated (PUFAs) mono -unsaturated (MUSFs). Kids had significantly (p<0.01) higher content C18, C14, C11, C18:2 C18:3 than kids, surpass C16, difference between two-breed lacked significance C18:1.Also, it shown castrated proportion all studied as compared intact profiles lower 15kg 20 25kg.
